India's version of barbecued chicken is the well known bright red tandoori chicken. This chicken dish dates back to the time of the Mughal Empire.

Tandoori chicken is prepared by marinating the chicken in yogurt, lemon juice and seasoned with cayenne pepper, garlic, giner, cumin and other spices, then grilled or broiled. Cayenne, red chili powder, or other spices give it its red color. Turmeric produces a yellow-orange color.
